My favorite sandwich of all time is Panera’s Mediterranean Veggie sandwich. I made it for the first time with homemade tomato basil sourdough bread and about passed out.
It’s just so good.
This sandwich is simple and easy to put together, and if you do decide to make the tomato basil sourdough bread yourself… you’ll be in heaven.

- Hummus: I love the roasted garlic hummus – it complements the flavor of the bread perfectly. I also love the roasted red pepper version.
- Feta Cheese: A salty pop that balances the sweetness of the peppers and the freshness of the veggies. The texture is so much better if you buy the chunk and crumble it yourself.
- Sweet Piquante Peppers (Peppadew): This is the secret ingredient that ties everything together and makes the whole thing seriously delish. I like to chop them up so you get a little bit in every bite. If you don’t add these peppers, it’s not a Med Veg sandwich!!

- Salad Greens: Use a mix like spring greens or baby spinach for color and crunch.
- Beefsteak Tomato: Juicy, thin slices are perfect!
- Cucumber: Adds a refreshing crunch.
- Red Onion: A few thin rings give a sharp bite that cuts through the creaminess of the hummus and cheese.

Ingredients
- 2 slices tomato basil sourdough bread
- 2 tbsp hummus the garlic version is so good with this
- 2 tbsp feta cheese crumbled
- 1/4 cup sweet piquante peppers diced
- 1/4 cup salad greens
- 1 beefsteak tomato thinly sliced
- 1 cucumber thinly sliced
- 1 red onion thinly sliced
Instructions
- Prep your ingredients. Thinly slice 1 beefsteak tomato, 1 cucumber, and 1 red onion. Dice 1/4 cup sweet piquante peppers.
- Assemble your sandwich. On one slice of tomato basil sourdough bread, spread 2 tbsp hummus. Crumble 2 tbsp feta cheese on top and press it in. Do the same with the diced peppers. Then, add 1/4 cup salad greens and slices of the beefsteak tomato, cucumber, and red onion. Top it with your second slice of tomato basil sourdough bread.

Just had this amazing sandwich! My husband and I LOVED it! I froze half of my Tomato Basil bread so I can make finger sandwiches for a get together next week. I will add some Kalamata olives to the tray. Yum!!!
